Fruits and Vegetables to Eat this Spring

Flowers are blooming, birds are chirping, and the sun is finally shining! Spring is officially here and along with spring comes a variety of seasonal fruits and vegetables. Local markets will begin filling their shelves with early spring vegetables like scallions, and it is only a matter of time before the rest of the spring fruits and veggies start coming in. The following are some of the vegetables currently in season this spring!


Known for its sour taste, rhubarb is more than just something you can use in a pie! It ranges in colour from red to pink to pale green and has a similar consistency to celery. While rhubarb is grown during the cold winter, it is best when harvested in the spring. Rhubarb isn’t rich in essential nutrients like other fruits, but it does come with a low-calorie count and are a good source of fibre. Rhubarb is also high in antioxidants and has similar health benefits of red wine and cocoa.


Technically you can purchase asparagus year-round, but fresh asparagus picked at the height of the season is grown in the spring! It’s light flavour and crunch is perfect to accompany any meal. Not only is asparagus low in calories, but it is also packed with essential vitamins, minerals, and antioxidants. Paired with a fiber-rich diet, asparagus can help reduce the risk of high blood pressure, diabetes, and heart disease.


Apricots are one of the most versatile fruits you can add to your diet. Apricots are at their best in the spring and are a great source of vitamin A. Apricots have also been found to be high in fiber. Fruits high in fiber help reduce bad cholesterol and help protect your heart. Not only are apricots great for your digestive system but they are also full of phytonutrients which helps ensure good skin!

New Potatoes

New potatoes are small and tender and are at their peak in late spring and early summer. They are perfect for tossing in salads or roast in a pan and accompanying any meal. New potatoes are slightly sweeter and are firmer in texture compared to other white potatoes. All potatoes contain a starch known as resistant starch that may help improve blood sugar.


Strawberries are a universal fruit and can be used in salads, desserts or in a side dish to accompany your meal. These berries are the earliest berries to add to your everyday meals and hit their peak in early summer. Strawberries are a great source of fiber, vitamin C and have a variety of antioxidants to help boost your immune system.
